Nous avons fait le choix pour nos couteaux d'utiliser un acier inoxydable Alleima, garantissant une excellente tenue de l'aiguisage, et qui ne donne pas de goût aux aliments.
Le manche de notre Couteau de Laguiole est un clin d'œil à nos origines, puisque la matière naturelle que nous avons choisie n'est autre que du chêne de barrique de vin rouge, fabriqué à Bordeaux, par la tonnellerie Demptos.
Les deux extrémités du manche sont en inox massif, ce sont les mitres. Elles protègent le manche contre les chocs et améliorent l'équilibre du couteau.
Nettoyez la lame avec un chiffon humide uniquement. Évitez de mouiller le manche en bois. Affûtez régulièrement avec un fusil, et lubrifiez le mécanisme avec une huile adaptée si nécessaire.
